After spending 11 years in an ex-bourbon hogshead this was transferred to a heavy toast and medium char 2nd fill hogshead for the remainder of its maturation

as if the peat was not fully dried

with chocolate covered macadamia nuts and sweet pickled figs

Cask No. 6.71 AMERICAN It seemed to quiet usImagine smooth caramels, molasses toffee covered in dark chocolate, of course with a soft crunchy sweetness. A serving of rum pudding under strawberry trifle surrounded by hints of soothing pipe smoke, burnt oranges and an old leather chair. Water not required, but caramels and fruit notes are enhanced. Our serving suggestion: a dram to drink and a drizzle over coffee ice cream.
